0 Healthy Carrot Cake ( Fat free cake recipe)


This carrot cake recipe is healthy and delicious.

It contains no fat, uses molasses sugar and uses wholewheat flour.

This carrot cake is very spongy and moist and will keep fresh in a sealed tub or wrapped in plastic wrap/foil.

Chef Jeenas carrot cake recipe is easy to make and so very tasty and healthy to eat.

Go ahead and give Chefs carrot cake recipe a try as the taste is wonderful.




Ingredients for healthy carrot cake recipe

4 Tbsp Wholewheat Flour
1/2 tsp bicarbonate soda
2 1/2 Tbsp Dark Molasses sugar
1 1/2 large Carrots
2 large Tbsp Honey
1 large tsp carob powder
1/2 tsp cinnamon(optional)
1/4 tsp nutmeg
1 egg


How to make a healthy carrot cake


Place sugar into a bowl.



Add grated carrots and mix well.



Add honey.



Mix well.



Sieve all dry ingredients - keep your left over wheat bran from the flour.





Mix well




Whisk egg.



Add the egg to your carrot cake mixture.




Mix well then add the left over wheat bran.



Mix well.




Pour carrot cake mixture into a greased and floured cake dish.




Cook in a hot oven at 150C for approx 30 minutes.

Gently press the top of your cake if it is spongy it will be ready - or you can use a thin skewer to check if the cake is cooked.





Leave carrot cake to cool in the original dish or it will break when you take it out.



Decorate the top with flaked almonds, sultanas and dates.



Dust the top with powdered sugar for decoration.

0 Curried Peas and Beans


Curried Peas and Beans recipe:

Ingredients:


1 Medium Red Onion
2 Tiny White Onions - cubed
Half Red Pepper/Capsicum - diced
Half Green Pepper/Capsicum - diced
1 Medium Parsnip - diced
4-5 Small Carrotts - diced
1 Medium Tomato - diced
Olive Oil
1 Tin Mixed Pulses
Half Tin Petite Pois Peas
Tomato Puree
Water

Spices you will need a teaspoon each of -
Ginger
Ground Corriander
Turmeric
Half tsp - Ground Cummin
3 tsp Garam Massala
Dried Corriander Leaves - large sprinkle

Recipe instructions:

Fry the red and white onions on a high heat for a minute or two then turn onto a
medium heat and add carrots. Cook for 5 minutes or so then add Parsnips. Cook for 10 minutes then add red and green peppers and tomato with all the spices EXCEPT the garam massala, pour olive oil over the spices then stir. Add enough water to cook them down with and leave on medium heat with a lid on for ten minutes or so, or until the carrots are to the texture you desire! Then add the tined beans, peas, garam massala and dried corriander cook for a few minutes then add a squeeze of tomato puree to thicken - drizzle some more olive oil if needed- simmer with lid on for 7 - 10 minutes. It will be ready when the beans have cooked. Add salt at the end if desired.

0 Healthy Vegetable Curry

Healthy Vegetable Curry recipe



1 Large Onion(cut into slices)
Half a Cauliflower (cut into florets and pre boiled for softness)
1 or 2 Cloves of Garlic ( chopped)
1 Yellow pepper (chopped)
1 green pepper(chopped)
Some mushrooms(sliced)
Olive Oil
cup of creamed tomatoes
Coriander seeds(just a sprinkle of each seed)
Mustard seeds
Cumin seeds
chilli powder( half a teaspoon or more if you like it spicy)
ground ginger(3\4 a teaspoon)
garam massala(2 teaspoons heaped)
turmeric(1 teaspoon)
ground coriander(1 teaspoon)
ground cumin(1 teaspoon)

Before you start please note that the shape or size you cut your vegetables does not matter. If your curry needs more moisture add a little water -but only a little water a time. Also add more olive as you go along.

Heat some olive oil in a pan or wok and add the chopped onions. Cook for a few minutes then add the garlic, only gently cook the garlic for a minute or so. Spoon out the contents of the pan into a bowl and turn down the heat(sometimes even pull the pan off just for a moment)then add the coriander, cumin and mustard seeds and fry them until they 'pop'. Then add back the onions, garlic and add the creamed tomatoes.

Stir in the ginger powder then add the turmeric, cumin and coriander powder and stir it into the curry with a splash of olive oil. Let it cook on a medium heat for a few minutes then add the peppers and cauliflower and garam massala.

Cook for 5 minutes or so then add the mushrooms and chilli powder. When the veg is all cooked it's ready ! Add a some tomato puree if it needs thickening a little.

If you like chicken curry replace the cauliflower with chicken peices. But always remember that chicken must be piping hot before you eat it.
