0 Healthy Date Pancakes
When the dates look soft pulp in a blender for a minute or so until it forms a paste. (If it is too thick add a tiny amount of water to loosen it but try to pulp it first - sometimes it looks thicker than it is)
For the Pancakes
Some Wholewheat Flour
2 Eggs
2-3 Tbsp Honey
Approx 1 Pint Milk
First sieve the wholemeal flour into a bowl and discard the left over wheat bits(pour bits back into flour bag or seal in a bag for a different recipe).
Heat a griddle/frying pan to hot then add a small drizzle of rapeseed oil with a small blob of butter/healthy margarine(olive oil is too savoury for this dish and butter will burn without the rapeseed oil. You only need to do this once, once is enough to grease the pan.
Pour in some batter as you would a pancake and tilt the pan a little to let it spread. You can tell when it is ready for turning over as it cooks the batter will look more solid - cook it for a minute or so then turn it over.
Onced turned over you might want to gently press down the sides with your spatula if the edges lift - don't worry though. Cook for a minute - it is ready when it is a little golden brown on each side.
Now put your pancake onto a plate and coat with your date filling.
Roll up the bottom of the pancake.
Keep on rolling to the top.
Now cut the roll into three pieces diagonally.
Serve with some more of your date filling. Enjoy your healthy pancakes! :)

0 Jeena's Mango Lassi
Mango lassi is delicious, healthy and really simple to make. You have to try this recipe as it is so very refreshing !
To make mango lassi add half yogurt to half mango juice (and vanilla if you choose) into a blender and turn on for 5-10 seconds.
Pour into a glass sit back, relax and ENJOY!

0 Fish mexicana recipe
Chef created this dish that adds a touch of spice to fish.
This fish recipe uses fresh caught mackerel and fresh chilli in a tomato base sauce.
Ingredients
2 Green chilis (chopped)
1 Red chili (chopped)
1 Red pepper/capsicum (diced)
1 Green pepper/capsicum (diced)
1/2 Cup creamed tomatoes
2 Small onions-finely chopped
Olive Oil
2 Whole mackerel (gutted etc)
For the Chunky Sauce
Fry the onions for a few minutes, mush the chilli in a mortar and pestle then add to the onions.
Cook for a minute or two then add the peppers/capsicums and creamed tomato with a splash of water to loosen it up.
Add salt and pepper to season.
Simmer for 10-20 minutes.
How to cook the fish
Make sure you have cut the head and tail off and that the fish is gutted(your fish monger will do this if you request it ).
Put 3 slits diagonally on each side of the mackerel.
Cook them on a hot griddle/frying pan for a few minutes on either side - then put the fish on to an oven tray with a splash of water straight into a hot oven 220C for 10-15 minutes until the fish is cooked through to the bone.
So delicious infact.
That this is all that was left on the plate!

0 Coconut vegetable rice recipe
Chef has prepared a tasty coconut vegetable rice recipe.
This is a healthy and delicious rice dish that can be cooked as a side dish eaten alone with bread.
There is a good combination of vegetables in the rice so that when you are eating it one vegetable does not stand out over another vegetable - a perfect blend.
1 medium Onion (diced)
1 Sweet red pepper (diced)
5 Tbsp Frozen petite pois peas
1 large Flat mushroom (diced)
1 tsp Chef Jeenas Mild curry powder
1 tsp salt
150ml Light coconut milk
250ml Cold water
Rice bran oil
200ml Cold water
Rice
10oz Basmati rice
Cold water to soak
How to make a vegetable rice recipe
Gently fry the onions and pepper until it starts to just soften.
Pour the coconut milk mixture into the rice stir well.
Do not remove the lid.
Turn the heat up on high for 10 seconds then back down to the lowest heat for 13 minutes being sure not to remove the lid whilst cooking.
Serve the rice directly on to the plate or lightly spoon some rice into a small bowl place a plate on top of the small bowl and turn upside down.
