0 Aromatic Chicken Special

I made this today and from the beginning to the end of cooking this dish the aroma just filled the room !

When you taste this curry your mouth will be filled with explosions of flavour from the toasted seeds and the fragrance of the fresh ginger that was so delightful.

You must give Jeena's Aromatic Chicken recipe a try as it tasted very DELICIOUS!


For the toasted spice mix

2 tsp Coriander Seeds
2 tsp Cumin/Jeera Seeds
just under 1/4 tsp Black Mustard Seeds
2 Brown Cardamon Pods
4 Small Green Cardamon Pods

And the rest......

1 tsp Turmeric
1/4 tsp Ground Cumin
1/2 tsp Ground Coriander
1/32 tsp Garam Masala
Pinch Salt(optional)
Large Pinch Ground Black Pepper
Dried Methi/Fenugreek Leaves
Dried Coriander Leaves

2 Small Onions(sliced)
1 Medium Onion(chopped small)
2 Tomatoes(Peeled, chopped and blended)
8 Small Cloves Garlic(chopped small)
5-6 Inches Fresh Ginger(chopped small)
1 Green Chilli (de-seeded, choped small)
1 Red Chilli (de-seeded, chopped small)
2 Large Flat Mushrooms (Chunks)


Put your seeds into a small pan and toast them till they smoke a little and crackle (do nt over do it or they will burn easy). Put your seeds into a blender/mortar and pestle to grind - take your green and brown cardamon pods and peel the skins off - discard the outer skin and add the tiny seeds from the inside of them into your blender mix. Grind them.

Now blend together your garlic and ginger you may need to add a few drops of water to help loosen it but be sure not to add too much water or it will go to liquid.




Blend up your medium onion and fry it in some rapeseed oil. Keep stiring it.



Add your sliced onion and cook them until they start turning golden. Keep stiring.



Turn your heat down a little add your garlic/ginger paste and stir well. Cook for a few minutes.




Add your turmeric and stir well.




Turn down the heat, add your tomatoes chili's and 2 tsp of your ground toasted seed mix.
Pour a little oil in and keep stiring well.




Add your chicken stir well. Keep simmering.



Add you dried methi leaves with your 1/4 tsp ground cumin and 1/2 tsp ground coriander. Stir well.

Add a small drop of water to loosen it up (remember too much water turn curry into a stew so only add small amounts at a time). Cook for 5 minutes then add your salt and black pepper stir well then add garam masala . Keep stiring.



Add your mushrooms. Stir well add a little more oil if needed or water. Put your pan lid on and simmer for 5 minutes or so.



Add your dried coriander and simmer right down until leaves soak up the curry and soften.




Your Aromatic Chicken curry recipe is now ready.

0 A Meme..........

Hi everyone my friend Mansi Desai from Fun and Food tagged me to write a few things about myself using the letters of my middle name. I don't have a middle name so I used the word ''Honey'' instead. Honey could be a name but it is also my favourite sweet! So here goes .....

Happy - I try to be happy about things in life because even when things are not so good, you can always be in a worse situation than the one your currently in. I think it's best to laugh at the silly things in life rather than stress over them. We can't be happy 24/7 but I think it sure is a great idea to try!

Oats - I eat oats for my breakfast at least 3-4 times a week. Porridge is my favourite breakfast of all time! It all started one winter when we were kids and we ate a lot of porridge for snacks because it was warm. I have ate it ever since and love it.

Nature
- I love nature, animals and plants etc are fascinating to me. I love breathing in the fresh air of the out doors. There are a lot of beautiful places in the world, where ever there is nature I think there is beauty. :)

Everlasting Love - I love my husband and kids soooo much! The love I feel for my family is ever lasting and so very precious. That is why it is great to enjoy cooking so I can please my family and make them happy with what I cook for them. Eating is a privilege in this world that is why it is good to enjoy your food and have fun with it. :)

Yellow
- Egg yolks, Honey, Buttercups, Sunflowers, ducks, lemons and so many more reasons to like this colour. Its bright and vibrant and one of my favourite colours.

0 Sausage Extravaganza

I made this for our dinner today and both my hubby and me loved it. Sausage's don't always have to be about a greasy fry up or bangers and mash! If you love sausages you will love this recipe! The broccoli just went so lovely with this dish(if you can't get broccoli spears just use your normal broccoli). Give it a try it tasted great! :)


Ingredients
4-5 Beef Sausages
Penne Pasta
2 Small Onions(sliced)
1 Sweet Red Pointed Pepper/Capsicum(deseeded + chopped)
2 Hand fulls Purple Broccoli Spears
Sprinkle Dried Parsley
1-2 Large Garlic Cloves(crushed)
Few Small Drops Lemon Juice
Olive Oil
Grated Parmesan Cheese
1 Tomato(Peeled and chopped)
Sprinkle Black Pepper





First of all get cooking your sausages in some olive oil and cook your broccoli in some water with a little salt(optional). Get your pasta on the go once your sausages have been on 5 minutes or so.



Cook your onions in some olive oil for 5 minutes. On a medium heat add your pepper then your garlic. stir well and add your tomato with some parsley and lemon juice.



Once cooked add a few teaspoons(or more if you like) of grated Parmesan cheese. Stir it well into your cooked pasta.



Slice your sausages and add to your pasta stir well.Always make sure your sausages are cooked through and hot in the middle.




Place your broccoli spears on top and sprinkle with pepper. Enjoy Jeena's Sausage Extravaganza! :)

0 Stewed chicken



Here is a chicken recipe that is healthy and so very tasty.

Chef used a pressure cooker to make it so that the chicken is soft, moist and just falls off the bone.

This dish is very delicious and has lots of flavours from the vegetables and chicken.

Just follow the step-by-step pictures to cook Chefs stewed chicken supper as it tastes wonderful and it is very healthy,



Ingredients
1 Small Leek(washed and chopped)
4-5 Carrots(peeled and chopped)
1 Medium Onion(sliced)
Large Handful Fine Green Beans(ends cut off and chopped)
Skinned Chicken Pieces(legs, wings etc not breast)
Water
Black Pepper
Gravy Granules(optional)




Place your chicken into your pressure cooker and fill with water just over 1/4 way in your pan.


Put your lid onto your pressure cooker securely and bring to the boil. You will know when it is hot enough as it will start to ''hiss''. When it does this turn your heat right down - your pan will still hiss but the heat will stay inside the pan. Cook your chicken for 30 minutes.




After 30 minutes turn off your heat and put leave your pan for a minute. Put your pan into your sink and run cold water over the lid of your pressure cooker. Leave for a minute or so then open up. Your pan shouldn't open unless it is safe anyway so don't worry about opening it up.



Take out your chicken pieces onto a plate but keep your stock in your pan to cook your vegetables in. Pick your chicken off the bone and put to the side.





Now add your vegetables to your pan. Repeat the process but this time only cook for 10 minutes. Then cool the pan in the same way etc.




Take your vegetables out and put on a plate just for a moment.


Add some gravy granules to your water(you may need to tip out a little water if it completely swamps your vegetables), if you are not using gravy just add a little salt. I don't add the granules for flavour just for colour so I only use a little. Add your vegetables then your chicken and simmer in your pan without the lid. Add a little pepper and Worcester Sauce if you like here.






Simmer for 5 minutes stiring well.



We ate ours with mashed potato - if you use Vivaldi potatoes for mashing you don't need butter as they are very creamy already. You can eat it as a stew with bread if you like. Enjoy!
