0 Brown Bread Recipe



How to make brown bread


This is a really easy brown bread recipe to bake.

Follow the step-by-step pictures to help you along the way.

This brown bread recipe is crisp on the outside and fluffy in the centre.

For an even fluffier brown bread use half white flour instead.



Align Centre

Ingredients for brown bread recipe


500g Wholewheat flour
1/2 - 1 tsp salt
1 + 1/2 tsp Sugar
1 Sachet of instant yeast (7g)
1 + 1/2 Tbsp Rice bran oil
Warm water

Note...for a lighter brown bread recipe use 250g brown flour and 250g of white flour.



How to make brown bread


Mix all dry ingredients together in a large mixing bowl. Add enough warm water to bring the flour into a dough.

Knead the brown bread dough for 5 minutes using a dough hook or 10 minutes using your hands
.



Grease a bowl that is larger than the dough. Place the brown bread dough into the bowl and cover.



Leave in a warm place until it doubles in size.



Once the dough has risen dust a clean surface with flour and slightly knead into shape.



Cut into pieces and place into a greased and floured loaf tin or make into brown bread rolls. Cover bread and leave to rise again.

Brush bread with oil. Place into a hot oven at gas mark 8 and bake for approximately 20 minutes. Bread is ready when you tap it and it sounds hollow inside.

0 Jeena's Sweet Almond Bread

This is my very own Sweet Almond Bread Recipe! I treasure it because it tastes so good, I really really want you to try this! :)
Jeena's Dough Recipe No1



Jeena's Dough
approx 2-3 oz Ground Almond(I am so sorry I didn't measure it but I will Update this recipe because I will make it again very soon!)
1Medium Egg
Tbsp Set Honey
Tbsp Rice Flour
Seeds Half Vanilla Pod
Flaked Almonds
Sprinkle Light Brown Sugar (optional)
Honey to Spread



For the Filling


Because I didn't weigh the ground almonds (sorry) I would advise to add a bit at a time until it is the consistency of a thick batter.
Apart from the dough ,sugar and flaked almonds! Mix all the ingredients together well again it should look like a thick batter.


Now for the Main



Roll our the dough into a long flat oval.





Then spread allover with Honey.







Spoon the almond batter in a line in the middle of the dough length ways. Don't worry that it doesn't look even etc..... it is a thick batter after all.



Now fold in each end of the dough and then bring together each length ways edge and pinch down the middle.(like a Cornish pasty- I needed to hands so I have no picture sorry) It should look a little like a package... as long as your batter can't leak out it is OK.





Now brush with some melted healthy margarine/butter(you don't have to it just helps the almonds stick and oil is too savoury!) and sprinkle with lots of flaked almonds, then if you want to sprinkle with some sugar. Now cook it in a hot oven until Golden brown. It will take 10 - 15 minutes depending on your oven. Cut the end off to check if your uncertain.



Once cooked slice and serve.

0 Wholewheat Pizza Recipe

This is my wholemeal pizza recipe.

Pizzas that are baked using wholewheat flour are very tasty and provide you with lots of fibre.

You can bake this wholewheat pizza recipe with or without cheese - either way be sure to top with nice healthy vegetables.



2 Small onions (sliced fine)
1 Green Pepper/Capsicum(sliced fine)
Some Mushrooms(sliced)
Tomato Puree
Sprinkle Black Pepper
Hard Goats Cheese or other cheese (optional)
Chef Jeenas wholewheat dough


First roll out some dough into a flat round shape. (or the shape of the baking tin you have)



Grease and flour your tin.




Place your flat dough into your baking tin.



Then spread on some tomato puree and sprinkle over your onions.




Add peppers and mushrooms.




Grate cheese to top the wholewheat pizza and sprinkle with black pepper.

If you do not want to use cheese this pizza tastes just as good without it.



Place pizza into a hot oven until the cheese has melted and the dough is golden brown.

0 Brown Knot Bread Recipe


My brown knot bread recipe is really simple and fun to bake.






Ingredients

Chef Jeenas brown bread dough
Olive oil
Flour for dusting


How to make wholemeal knot bread recipe


First cut two pieces of dough and roll into two long sausage shapes.



Then press one end onto the other with your finger.



Wrap one around the other like a long twist.



Proceed to then curl your twist into a round shape.




To make the other end stick underneath wet your fingers and press the end underneath.




Place onto a greased and floured baking tray cover with plastic wrap or a clean damp tea towel and leave in a warm place to rise for 30 minutes of until doubled in size.

Brush with olive oil and bake in a hot oven until golden brown.



Place on a wire rack to cool - enjoy your bread.

0 Double Bean Dinner

I usually cook this dish with some Coley Fish but it is nice on it's own too so I thought I would post it for you.

1 Green Pepper/Capsicum(sliced)
1 Red Onion(cut into rings)
Hand Full of Mushrooms (quartered)
3-4 Medium Carrots(sliced)
Pinch Curry Leaves Dried
tsp Turmeric
Inch Chunk Fresh Ginger
1 Garlic Clove
Water
Olive Oil
Half Tin Chick Peas
Half Tin Flageolet Beans
Pinch Black Pepper
A Few Fresh Coriander Leaves


First grind the ginger and garlic in the mortar and pestle.


Then add the turmeric and a splash of olive oil and mix into a paste - put to the side for later.



Put separate pan on and heat up both tined beans in the pan, drain once cooked and leave to add to your main at the end.
Fry the onions on a hot heat for a few minutes




Add the chopped carrots and fry for a few more minutes. Then add the curry leaves and ginger paste, mix thoroughly and add a little water to separate it all.





Then add the chopped green peppers, mushrooms and sprinkle of ground pepper and cook on a medium heat.





Once it looks almost cooked add a little fresh coriander and the beans. Cook for a few more minutes. Enjoy:)


0 Vegetarian Kebab - Lebanese Style Treat!


Jeenas Vegetarian Kebab tastes absolutely delicious.

My veggie kebab recipe is so very tasty that you must cook it to see how you can still have that lovely meaty kebab treat but without all the saturated fat that a meat kebab contains.

Ingredients for Lebanese Vegetarian Kebab Recipe
Half Tin Chickpeas
Half Tin Flageolet Beans
1 Heaped Tbsp Cumin Powder
Large Sprinkle Dried Parsley
1/2 tsp Sea Salt
Water
Olive Oil
1/4 tsp Baking Powder
2 - 3 Small Cloves Garlic
2 Small Onions
Sprinkle of Black Pepper
1 Tbsp Chickpea Flour

How to make a Vegetarian Kebab Lebanese Style



Blend the onion and garlic and place into a bowl.

Blend the pulses to a paste (it does not have to be a fine paste) then add to the onion and garlic, mix together along with the other ingredients apart from the chickpea flour.

Place in the fridge for 20 minutes.



Mix in the chickpea flour and pour into a hot oiled pan.



Let it fry for a few minutes then keep mixing it around until it looks like chunks of mince meat.



Keep stiring and frying the falafel mixture until it browns nicely.



Serve hot in a wholewheat pita and serve with chilli sauce, yogurt, salad or filling of your choice.
