0 Cauliflower Cheese Recipe

When I made this for my hubby tonight he was over the moon! Probably because it is the best cauliflower cheese recipe ever! Give it a try and see :)



For the Rue
Large tsp Butter
1 Large Tbsp Plain Flour
Milk
Pinch Salt
Pinch Pepper
approx 50g Cheshire cheese(grated)
approx50g Leerdamma Cheese(Grated)

For the Main
Half Tin Peas
2-3 Handfuls Spiral Pasta
Half Cauliflower(chopped small)



First boil your cauliflower in salted water.





When it is starting to go soft add your spiral twirls.




Once they are almost cooked add your peas and stir, turn down the heat.



For the rue melt the butter with the flour and stir well.




Gradually keep adding milk and stiring well.



Add and small pinch of salt and pepper to your liking. You want the consistency of a pancake batter - not too thick not too thin .


Your flour lumps should have dissolved. If by now it is still a little lumpy don't worry, strain it through a sieve to remove lumps and return it to the pan. Now add your grated cheese and stir well.


You should be left with medium thick sauce with no lumps.





In a bowl stir your cheesy rue sauce into your cauliflower mix - I also sprinkled in some Parmesan cheese here.




Serve as it is and Enjoy!

0 Jeena's Wholewheat Naan Bread

This recipe worked a treat for me today. It is wholewheat naan bread that is as soft and fluffy as a white naan. It is healthy to eat with curry's,stews, soups or even opened up with a delicious filling added. This Wholewheat Naan Bread Recipe is simple and quick to make so why not give it a try. :)




approx 1/2 to 3/4 Sachet Yeast
1/4 tsp Salt
1 tsp White Sugar
Splash Milk
Hot Water
7-8 Tbsp Wholewheat Flour
3 Tbsp Plain Flour
3 Tbsp Yogurt
1/2 tsp Bicarbonate Soda


Put a splash of cold milk into a cup.



Stir in your sugar then add enough hot water to warm your milk up.(you won't need much hot water here)




Add your yeast, stir then leave for a few minutes while you prepare your other ingredients.




Sieve your wholemeal flour into a bowl.



You should be left with some bran left over.





Do not discard the left over bran. Put it to the side for later.


Add your plain flour, bicarbonate of soda, salt and stir.



Add your bran and stir.

By now your yeast should have fluffed up.



Take another cup and put your yogurt into it with a tiny splash of hot water to warm through the yogurt. Now add your yogurt to your flour. Also Gradually add your yeast mixture and stir well.


You may need to gradually add more flour if it is too sticky. Knead your dough for a few minutes preferably 5 minutes.



Grease your bowl then over and leave for 30 minutes or until your dough has doubled in size. If your room is quite cool make sure you leave it to rise in a warm place.



Once your dough has doubled in size it should feel soft and light and fluffy.




Shape your breads with your hands and place onto a greased and floured baking tray. Put into a hot oven at approx 220C for 10 minutes or until golden.




For a more pita style bread roll out with a rolling pin into a thinner shape.



Enjoy Jeena's Wholewheat Naan Bread with soup, curry, stew or fill it with your favourite yummy filling! I opened mine up and ate it with some leerdamma cheese and it was delicious.

0 Vanilla and Chocolate Cheesecake Recipe


Here is my vanilla and chocolate cheesecake recipe!

I made this simple cheesecake recipe last night and it was well worth waiting till today to eat it!

This cheesecake tastes wonderful. It is easy to make this cheese cake does not have to be cooked.

Jeena's Delicious Cheesecake Recipe will make you smile and say Mmmmmm because it is so very tasty!

Why not give it a try and see how good it tastes for yourself.



Ingredients
1/2 Pack Digestive Biscuits
70g Butter
3 Pieces Dark chocolate
250g Mascarpone Cheese
200g Full Fat Cream Cheese
3-4 Tbsp Powdered Sugar
2 tsp Vanilla Essence
2-3 Small Drops Lemon or Lime Juice
1/4 tsp Cocoa Powder


Getting started on Jeena's Vanilla and Chocolate Cheesecake Recipe..



First put your biscuits inside a plastic food bag.



Crush them with a rolling pin or something heavy.



Melt your butter on a gentle heat.


Mix the cocoa powder into your butter then mix in the digestive crumbs.



Melt the chocolate in your microwave (it won't take long) and stir it into your crumbs.

Alternatively you can place a dish over some hot water, place the chocolate into the dish and gently melt.



You will be left with chocolate crumbs.


Put your crumbs into the cheese cake dish, pat down with a spoon making it even.



Place all your cheese into a bowl.



Sieve in your powdered sugar with vanilla essence and mix well.

Add only a spoon full at a time and keep tasting till it is sweet enough for your taste.



Once mixed you should be left with a thick cream add a few small drops of lemon or lime juice and mix well(do not add too much juice here a few drops will be enough, you want a hint of citrus not a flavour of it).

You should still be left with a thick cream.




Pour in your cheesecake filling on top of the chocolate biscuit mixture.



Spread even with the back of a spoon.



Cover with cling film, refrigerate your cheesecake(it always sets better and tastes much better after being in the fridge for a good number of hours).

Decorate with shavings of fresh dark chocolate.

0 Sweet Iced Bread

This is a great treat for when you make too much white dough for another dish. It is a real sweet treat! Have fun getting sticky! :)




White Bread Dough

Vanilla Essence

Powdered Sugar

Few Drops Lemon juice

For the Icing

Put a few drops of vanilla essence and lemon juice with a little cold water into a bowl and sieve enough powdered sugar into it to form a thick icing. (you don't need to make this until your bread is cooled)


Sprinkle your dough with sugar and knead in, sprinkle again and knead again.



Your dough should start to come apart a little because of the sugar - this is fine now shape it into a round and put onto a greased and floured baking dish.







Put into a hot oven approx 220C for 15 minutes or so or until golden and cooked. Then leave on a wire rack to cool.





Once cooled spread your icing alover the top, leave the icing to harden a little and enjoy! :)
