How to make lemon curd


Chef has been busy in the kitchen this weekend making a lemon meringue pie,an important ingredient is lemon curd.

Lemon curd can be used for many different sweet and dessert recipes.

This is a real simple recipe to cook, it does not take very long to prepare, almost instantly you will see the lemon curd mix together.

A lemon curd recipe can be used warm or cold, once Chefs lemon curd recipe has cooled it sets and has a delicious creamy texture and beautiful creamy lemon taste.



Ingredients for lemon curd recipe


1 Unwaxed lemon
100ml Lemon juice
40g Cornstarch (cornflour)
8oz Caster sugar
4 Egg yolks
350ml Water
1/2 oz Butter/Margarine
Pinch salt


How to make lemon curd


Separate the egg whites from the egg yolks, zest a whole lemon.

In a heavy based saucepan mix together the cornflour, salt and sugar.




Add the lemon juice, water and lemon zest mix well.



Bring to the boil and simmer and stir until it becomes thick.

This will take approximately 5 minutes.



Once the mixture becomes thick take the pan off the heat.




Add spoon of the hot mixture to the mixed eggs and mix very well very quickly.



Pour the egg mixture into the pan a little at a time being sure to mix very well between.


Place the pan back on the heat and very lightly simmer the lemon curd on a low heat stirring often.

Do not boil.

The lemon curd should thicken a little more, this will take approximately 5 minutes.



Add the butter/margarine and stir well for a couple of minutes.

Take off the heat and use as desired.
