0 Marshmallow Cookie & Biscuit Recipe (Low fat recipe)

Chef uses just one tablespoon of low fat margarine to make these low fat cookies.

These biscuits are so more-ish that you will will be seriously tempted to eat the whole batch.

One main ingredient marshmallow is used in this recipe for the cookie mixture to produce 4 different kinds of delicious cookies biscuits from it.

Easy to make these cookies do not even need to be rolled out to make the thin biscuits.

The marshmallows not only give a great sweet flavour to the cookies, it gives the cookies a great chewy texture too.

Ingredients for marshmallow cookies

4 Tbsp Soft Light Brown Sugar
2 Tbsp Golden Syrup
1 Tbsp Low Fat Margarine
5 heaped Tbsp Self Raising Flour
1/2 tsp Sweet Spice Mix
2 Handfuls Sultanas
1 Tbsp Skimmed Milk (small level spoonful)
2 Long Marshmallows or 1 Cup Small Marshmallow pieces


How to make marshmallow cookies recipe



Place sugar, syrup and margarine into a bowl, mix well.



Add flour, sultanas and sweet spice, mix well.



The cookie mixture will look like pastry crumbs coming together.

Now add skimmed milk and keep mixing very well until it forms a ball of biscuit dough.



Making the different marshmallow cookies


Now the cookie mixture is ready, take a quarter of the dough and place the remaining dough in a separate dish.

Add the 1/2 cup or 1 handful of chopped/small marshmallow pieces to your 1/4 dough and knead them in.

Your hands will get a little sticky here so just dab them in a little flour.



Shape pieces of the marshmallow dough into flat cookie shapes and balls and place on a greased and floured baking tray.



For your marshmallow cookie tarts, grease and flour a tart baking tray.

Take another quarter of your mixture and shape into flat rounds with your hands and place into each mould of the tray.



Place a few chunks o marshmallow into each tart case just as you would making a jam tart.



You should have half of the mixture left.

Half it again and roll into little balls and place onto a greased and floured baking tray.

Take chunks of the mixture and flatten on a little lightly floured plate with your hands, it should spread easily, cut with shape of your choice.





Cook in a hot oven at 200C for 10-15 minutes or until golden brown.

Careful that the marshmallow cookies do not over cook and burn.
