0 Vegetarian Stir Fry Recipe (Gluten/Dairy/Egg Free)


Here is my Vegetarian Stir Fry Recipe!

This tasty vegetarian stir fry uses vegetables that compliment each others taste, it is very delicious indeed. It does not take long to cook and has wonderful flavours. The gluten free pasta has amazing texture to this stir fry recipe and makes it unnecessary to use noodles.


Stir fried vegetables are a wonderful dish to eat at any time of the day or night. Vegetables have a wonderful flavour all of their own and the health benefits of using vegetables in cooking are fantastic. Vegetables not only contain vitamins, minerals and water but they are a great source of fibre too!

This vegetarian stir fry recipe uses no gluten, eggs or dairy making it even healthier to eat!

So lets get cooking and taste this tantalising vegetarian stir fry recipe for yourself..



Ingredients
1 Carrot (strips)
1 Onion (slices)
1 Piece Red Pepper/Capsicum (chunks)
1 Piece Orange Pepper/Capsicum (chunks)
2-3 Inch Fresh Ginger Blended with Splash Water
Tamari Sauce (gluten free)
Salt and Pepper
Olive Oil
2 Large Handfuls Kale
2 Handfuls Gluten Free Pasta
1/2 Zucchini (strips)
1/4 Turnip (small strips)
Pinch Pumpkin Seeds

'note...If you love the taste of ginger add a little more if you like a light taste of ginger you can add less, if you don't like ginger you can omit it and the stir fry will still taste fabulous!'



Getting Started on Jeena's Vegetarian Stir Fry Recipe..

On a medium heat fry your carrots, turnips and onion for 8-10 minutes, do not brown them just soften them up( you cook these vegetables first as they are hard in texture). Place your gluten free pasta in some lightly salted hot water and cook.



Add your red and orange pepper/capsicum and zucchini. Keep stiring well.



Rinse your kale in a sieve and add to your stir fry recipe. Stir and add the fresh ginger, stir well and cook for 5 minutes.



Your gluten free pasta should be cooked, drain off the water add to your stir fry.




Sprinkle some pumpkin seeds onto the vegetarian stir fry.




Cook for a minute or two then add a few splashes of tamari sauce and a small pinch of salt and pepper (you don't need much salt).



Your Vegetarian Stir Fry Recipe is now ready to eat.

Serve as cooked or with some braised tofu on top!
