0 Apple and Blackcurrant Pudding Recipe


What is the difference between a pudding and a cake?

Is it the ingredients? Is it the shape? Is it the method of how it it is cooked ?
Or is it whether it is eaten hot or cold?

Is it the texture, feel and taste?


There are many different opinions in regard to the difference between a pudding and a cake.

Here I will tell you what Jeena think's. ...Any 'cake' eaten warm to me is a pudding, I also think a cake can be of any shape with varied textures, the same of puddings, they too can be any shape and have different textures.

The cooking method is also a factor to consider; You can take the same ingredients and produce one as a cake or one as a pudding !

I present to you...my egg free and fat free "apple and blackcurrant pudding" that is a fruity little delight to eat and best eaten warm.

I used a mandolin to shred the apples but you can grate the apples instead if you like.

Serve this pudding recipe to your family or friends and they would not believe that it has no eggs or fats in this recipe (puddings by Jeena can be healthy and so very tasty !)




Ingredients for Eggless Apple and Blackcurrant Pudding Recipe

210g Tin Blackcurrants
3 Apples (peeled and grated/mandolin)
5 Tbsp Caster Sugar
1 tsp Vanilla Essence
2 Tbsp Ground Almonds
5 Tbsp Self Raising Flour
4tsp Sugar
3 Tbsp Blackcurrant Juice
1 Tbsp Honey

1 tsp Caster Sugar

Glace
Powdered Sugar
Water

How to make Jeenas Apple and Blackcurrant Pudding Recipe



Open the tinned Blackcurrants and drain the fruit.

Keep the blackcurrant juices in a separate bowl from the berries.



Place the blackcurrant fruits into a blender with 1 teaspoon caster sugar.

Blend into a paste.



Pour blackcurrant paste into a bowl.

Add the shredded apples.



Add 5 tablespoons of caster sugar and 1 tablespoon of ground almonds, mix well.



Add the 5 tablespoons of self raising flour, mix well.



You will be left with a thick mixture.



Add the 3 tablespoons of blackcurrant fruit juice and 4 teaspoons of caster sugar, mix well.



Add your 1 tablespoon honey, mix well.



Pour into a greased and floured loaf tin.

Place into a hot oven at 170C for 25-30 minutes or until slightly spongy to the touch and a skewer comes out clean.



Once cooked take a skewer and place it into the apple and blackcurrant pudding.

Take some powdered sugar in a bowl and add enough water to make a runny glace, do not waorry about lumps of sugar as this gives the pudding a lovely crystal topping.

Take a spoon and drizzle the glace over the top of the pudding.




Leave glace to slightly set and eat warm.
